2000 Limestone Coast Shiraz
Tasting Notes
The 2000 Greg Norman Estates Shiraz is deep vibrant red with purple hues. The complex bouquet is made up of dark berry, plums and black cherry with a hint of vanillan and spice. The palate shows an excellent depth of flavour, abundant rich dark berry fruit and spicy well balanced oak. With an almost seamless structure, the wine's intense flavours are supported by supple fine grain tannins, providing a long rewarding finish.
Grape Source
The fruit for this wine was sourced from premium vineyards within the Limestone Coast, with the majority coming from the Coonawarra and Padthaway regions. Vineyard management aims to control vine vigour, and produce low yields of intensely flavoured fruit. The 2000 vintage conditions were mild to warm during the ripening period, ensuring development of berries with excellent colour and optimum flavour.
Vinification
The Limestone Coast Shiraz was fermented in both small 4 tonne open fermenters and 35 tonne Roto fermenters. Selected wine parcels then received extended maceration to enhance palate weight and tannin structure. The outstanding parcels were pressed off skins and finished fermentation in fine grained medium toasted oak barrels. Maturation for up to 20 months was in a combination of new and seasoned French and American oak barrels.
