The fruit for this wine was sourced from premium vineyards in the Coonawarra and Padthaway regions of South Australia.
Winemaking
The individual Cabernet Sauvignon blocks were fermented separately in small rotary fermenters and gently fermented for 8 days. Wines completed fermentation in new and 1 to 2 year old French and American oak. After 18 months maturation, each oak barrel group was tasted and the final blend determined by combining all barrels that were full bodied, showed regional and varietal Cabernet Sauvignon characteristics and were of the finest texture.
Tasting Notes
Chocolate mint, wild berry, mulberry and a hint of vanillin oak aromas lead to the complex palate flavors of leafy forest, mulberries, black cherries, vanillin and spice. The wine has a fine elegant structure and silky texture, with typical Coonawarra region dusty tannins. A lingering flavorsome Cabernet from the Limestone Coast region which will develop further complex character with careful cellaring.
