Recommended Wine Pairing: South Eastern Australian Sparkling
Ingredients
- 2 lbs seedless green grapes
- 1 small cucumber, peeled, seeded, and coarsely chopped
- ¼ cup raw, slivered almonds, toasted
- 2 scallions, white and light green parts only, coarsely chopped
- ½ medium jalapeño, seeded
- ¼ cup champagne vinegar
- ½ cup plain yogurt
- 1 oz cream cheese
- 4 Tbsp extra virgin olive oil
- ¼ cup buttermilk
- 1 Tbsp honey
- ½ tsp salt
- ¼ tsp freshly ground white pepper
- 2 large dill sprigs, minced
- ¼ cup fresh basil leaves, minced
- ¼ cup fresh mint leaves, minced
Directions
Combine grapes, cucumber, almonds, scallions, jalapeño, vinegar, yogurt, cream cheese, olive oil, buttermilk and honey in a blender or food processor. Process until almost smooth, with just a bit of texture. Stir in the salt, white pepper, dill, basil and mint.. Cover and refrigerate until cold.
Garnish with thinly sliced cucumber wedges and a dollop of either crème fraiche or sour cream. Add a few sprigs of fresh dill at end. Serve.
