2007 Eden Valley Chardonnay

Viticulture
The fruit for this was sourced from premium vineyards in the Eden Valley. The 2007 vintage was difficult with low winter temperatures threatening severe frosts, followed by unusually high summer temperatures which placed pressure on water resources. The resulting fruit ripened quickly and was harvested early with full flavors, fine structure and balance.
Vinification
Partial barrel fermentation combined with secondary malolatic fermentation produced a wine with creamy texture and fresh citrus flavor. These were further developed by aging in seasoned French oak.
Tasting Note
The Greg Norman Estates 2007 Chardonnay opens with punchy fruit aromas of peach and pear which are complemented by flinty notes and integrated oak characters. The palate is mouthwatering with crisp green apple and fleshy peach being balanced by creamy vanillin oak.
Suggested Food Pairing
Grilled fish with lemon and pepper, or chicken with creamy mushroom sauce.
