Limestone Coast Cabernet Merlot
Viticulture
The fruit for this wine was sourced from the Limestone Coast vineyards in South Australia's cool (maritime) south-east corner, 70% comes from Coonawarra sub-region, with smaller parcels from Robe, Mt. Benson and Padthaway. Winter was cold and dry followed by a touch of spring rainfall. December was mild and dry with a lot of rain in January which was quite welcoming to boost vine health.
Vinification
The individual vineyard parcels of fruit were harvested then fermented separately in rotary and static fermenters. Careful management of the wine in these fermenters extracted the dark color and rich flavors from the skins without any harsh tannin. The wine was pressed off the skins and racked to new and seasoned French and American oak for maturation prior to blending and bottling. Selected parcels remained unoaked to retain a fresh fruit focus with vibrancy of flavor.
Tasting Notes
The Greg Norman Estates 2007 Limestone Coast Cabernet Sauvignon Merlot is a vibrant crimson color with garnet red hues. On the nose, fine aromatic spice, cedar and cherry meld with bright red berry, mulberry and dark fruit cake aromas. This wine is medium bodied with a fine, linear and long savory edge. Dark mulberry and cherry fruit flavors show through the mid-palate, the long velvety tannins contribute to the wine's elegant structure and texture, adding distinction and length to the finish.
