2006 North Coast Cabernet Sauvignon

Growing Region:

The North Coast appellation, which covers Napa, Sonoma and Lake Counties, is renowned for the depth and richness of its Cabernet Sauvignon. Having access to a larger region offers the winemaker the luxury to choose the best grapes in order to create a balanced wine with lush fruit and firm tannins. The majority of the fruit sourced for the Greg Norman California Estates 2006 Cabernet Sauvignon came from Sonoma County chosen for its bright fruit profile, while fruit from Napa and Mendocino Counties provide complexity and structure.

Winemaking:

The grapes were crushed and fermented an average of seven to 10 days. Pump-overs were performed three times a day to helped extract color and tannin. After fermentation the wine was aged for 8 months in one-and two-year-old French and American oak barrels to add complexity and depth of flavors.

Winemaker's Notes:

The Greg Norman 2006 North Coast Cabernet Sauvignon is dark red in color. Aromas of blackberry and lavender are highlighted by hints of coconut. Flavors of dark plums and black currant are delivered on a silky mouthfeel with velvety tannins and a medium-long finish.

Food Pairing:

The dark berry flavors of the 2006 North Coast Cabernet Sauvignon would pair well with a hearty beef stew, classic cassoulet or slow braised brisket.
